Ingredients for autumnal pumpkin pasta
Fresh ingredients
- 1/2 Hokkaido pumpkin: for the nutty-sweet base of the sauce
- 1vegetable onion: for a fine seasoning
- 1/2 chili pepper (optional): for a slight spiciness
- 2cloves of garlic: for the flavor kick
- 100 g smoked tofu: fried until crispy for a spicy addition
- 1lemon (optional): a squeeze of juice for freshness at the end
Store cupboard
- 2tbsp olive oil
- 75 ml white wine: to deglaze and refine
- 150 ml plant-based drink (e.g. oat or soy drink): for creaminess
- Nutmeg, salt, red pepper: to taste
- 1tbsp soy sauce: for the tofu
- 1tbsp coconut oil: for frying the tofu
- 1tbsp almond butter (optional): for an extra creamy sauce
Noodles
- Pasta ofyour choice (e.g. linguine, tagliatelle or penne)
Preparation of autumnal pumpkin pasta
Step 1: Prepare the ingredients
1. Wash the pumpkin thoroughly and cut into thumb-sized cubes.
2. Finely dice the onion and chop the chili pepper as required.
3. Peel thegarlic and also cut the smoked tofu into cubes.
Step 2: Roast the pumpkin
- Heat the olive oil in a pan and roast the pumpkin over a medium heat for approx. 5 minutes until it is lightly browned and soft.
Step 3: Add the vegetables
- Add the diced onion, chilli and crushed garlic to the pumpkin and fry for approx. 5 minutes until the onions are translucent.
Step 4: Deglaze with white wine
- Deglaze with white wine and reduce slightly until the alcohol has evaporated.
Step 5: Prepare the sauce
- Addthe vegetable drink and stir well. Simmer over a low heat, then mash the pumpkin with a fork until the sauce reaches a creamy consistency.
Step 6: Seasoning
- Season to taste with nutmeg, salt and red pepper.
Step 7: Fry the smoked tofu
- Heat the coconut oil in a separate pan and fry the tofu cubes until they are golden brown and crispy. Deglaze with soy sauce.
Step 8: Cook the noodles
- Cook the noodles in salted water according to the packet instructions until al dente, drain and add to the pumpkin sauce in the pan. Mix everything together well.
Step 9: Serve
- Arrange the pasta on plates and top with the crispy tofu cubes. Add a squeeze of lemon juice if desired.
